CHICAGO, September 9, 2025 - After developing more than 70 senior and assisted-living facilities, the real estate firm Gallaher Cos. is bringing operation of its residential complexes in-house.
The company announced Monday that it has formed a subsidiary to manage the operations it has developed and owns. The new concern, Gallaher Signature Living, is being led by Page Ensor, who previously oversaw 70 facilities for Brookdale Senior Living. In announcing her appointment as CEO, Gallaher Cos. noted Ensor’s deep experience in finance and operations.
In announcing the venture, the parent company noted a surging demand for senior living facilities in California. It quoted the state government’s projection that the number of residents in the state aged 60 and above is expected to increase by more than 60% over the next 20 years, which would push that age cohort to 26% of California’s overall population.
Gallaher is currently developing seven senior-living facilities within California, a 10% expansion of its holdings. Its current residences are all located in Western states. The developer owns those existing operations but had not been operating them.
The company characterizes its centers as boutique-like residences offering personalized services. The facilities typically offer a variety of restaurants and other foodservice facilities.
The food-and-beverage sales of senior living facilities are projected by IFMA The Food Away from Home Association to increase to $4.6 billion this year across 23,272 locations.
The primary business of family-owned Gallaher Cos. is acquiring and developing real estate. The property side of the concern is vertically integrated, with functions ranging from site planning to construction all handled in-house.
As Managing Editor for IFMA The Food Away from Home Association, Romeo is responsible for generating the group's news and feature content. He brings more than 40 years of experience in covering restaurants to the position.
