We asked the Silver Plate Class of 2013 a few questions to get an inside look at what makes them the operator all-stars they are today. Find out what they had to say about passion for foodservice, career accomplishments and what it means to be part of a legendary group of operators.

What do you enjoy most about your job?
I enjoy being a part of a team and leading a great team. The point in team development when everyone has a shared vision of how to reach our goals can be elusive but is magical when achieved.
Tell us about your biggest accomplishment.
Coming from the Brooklyn projects, I find that breaking the cycle of poverty and helping others along the way to do the same has been difficult but rewarding.
What advice do you have for someone new to the foodservice industry?
Know everything about the food that you will be responsible for and do not accept what is not acceptable for your customers. So often, people get caught up in the business side of foodservice and forget about the standards that make great food great.
What does being an IFMA Silver Plate recipient mean to you?
It validates that hard work in this difficult industry can be rewarded. When you are washing dishes on a Saturday night and you still have paperwork to do, you think that your efforts will go unnoticed. If you hold yourself and others to your standards, you will eventually reach your goals.
